Marinated gherkins
Marinated gherkins are the flagship of the category. These are young cucumbers up to 5–7 cm with a thin skin, dense crispy middle and tender seeds. How we make canned vegetables
The production process is built on the principle of «classic recipe + modern quality control».
- Raw materials. We buy vegetables from verified Ukrainian farmers — from small farms to large agro-enterprises. We take only seasonal products: cucumbers and tomatoes from late July to October, pattypan squash from August.
- Sorting. Each batch is sorted by size and quality. Gherkins are separated into «small» (3–5 cm) and «medium» (5–7 cm). Damaged vegetables are rejected.
- Marinade. Classic recipe — water, natural 9% vinegar, salt, sugar, spices (garlic, dill, bay leaf, pepper, currant leaves). Without vinegar essence substitutes.
- Sterilization. The jars are sterilized in autoclaves at +85…+95 °C — this is a guarantee of safety and long shelf life without artificial preservatives.
- Quality control. Each batch is checked — organoleptic, microbiology, marinade acidity, lid integrity.
- Labeling. Each jar shows the full composition, production date, expiration date, barcode. Without secrets and fine print.
How to choose quality canned products
- Transparency of marinade. The brine should be transparent or slightly cloudy (from spices). Cloudy with sediment is a sign of sterilization violation.
- Vegetable color. Natural — cucumbers dark green, tomatoes red or yellow, peppers from light green to bright red. Grayness is a sign of overcooking or old raw material.
- Integrity. Vegetables should be whole, not crushed. Gherkins are straight, without bent or crooked fruits.
- Lid. Should not «bulge» — this is a sign of bombing (bacteriological spoilage). When opening, there should be a clear «pop» sound — this indicates the correct vacuum.
- Composition. Natural — vinegar 9%, not vinegar essence. Without sodium benzoate (E211), sorbate (E420) and artificial dyes.
- Production date. Seasonal canning should be produced during the season period (July-October). If the date is «mid-winter», the vegetables are either frozen or imported.
