Product Description

Escolar (oilfish) is a deep-water sea fish with very fatty flesh. Often used as raw material for cold smoking — yielding a fatty delicacy product. The 4–7 kg size is large fillet pieces.

How to Cook

• Pan-fry in flour or batter — 4–5 min per side
• Bake in the oven with spices — 20 min at 180 °C
• Steam with vegetables
• Stew in a tomato sauce
• As a base for fish soup

Storage and Defrosting

Store in the freezer at -18 °C as specified on the packaging. Defrost slowly in the refrigerator over 8–12 hours — this preserves the flavour and structure of the flesh. Do not defrost in the microwave or in warm water. Once defrosted, consume within 24 hours; do not refreeze. The exact shelf life is shown on the packaging.
