Boiled-smoked chicken products
The flagship of the category is boiled-smoked chicken quarter in vacuum. This is the back of a chicken (thigh with drumstick), which is first boiled, then smoked with natural smoke. Ready to eat — you can eat it cold as an appetizer, add it to salads, potato side dishes, ramen. The catalog also includes boiled-smoked chicken fillet, chicken roll, chicken balyk, smoked wings.
Pork and beef balyks
Dry-smoked and boiled-smoked balyks are a delicacy subcategory. Dry-smoked balyk is smoked with cold smoke for 1–2 weeks, has a dense texture and expressive flavor. Boiled-smoked is softer, ready to serve. Slices perfectly into thin pieces for canapes, meat platter or festive serving.
Ham and meat rolls
Boiled-smoked ham from tenderloin, pressed ham, meat rolls with filling (prunes, nuts, spices), creamy ham. This is meat of the highest grade, without skin, with a minimal amount of spices — for those who love the pure taste of meat.
Smoked poultry
Smoked duck, smoked breast, smoked turkey, whole home-smoked chicken. Delicacy products with a rich smoky aroma — good as a main course, for salads and sandwiches. All smoking is on real smoke from fruit wood, without liquid flavorings.

How we make meat products
The production process is built on the principle of «fewer additives — more flavor».
- Raw materials. We buy meat from verified Ukrainian suppliers — chilled poultry, pork and beef from certified meat processing plants with quality control.
- Curing. Dry or in brine with natural spices for 24–72 hours. Without artificial ripening accelerators.
- Heat treatment. Boiling in water at +75…+85 °C for boiled-smoked items. This preserves juiciness and gives a delicate texture.
- Smoking. With natural smoke from fruit wood chips (alder, beech, apple) — from 4 hours (hot) to 1–2 weeks (cold).
- Quality control. Each batch is checked — organoleptic, microbiology, salt level, composition.
- Packaging. Vacuum packaging is the standard for most items. This extends the shelf life and preserves the aroma.
How to choose quality meat delicacies
- Color. Natural pink or reddish-brown. Bright red is a sign of an excessive amount of nitrites.
- Slice texture. Dense, without gray spots and bubbles. The muscle structure is visible on the cut.
- Smell. Expressive meaty with smoking notes. Without chemical or «sweet» chemical aromas.
- Composition on the label. Natural — meat, salt, spices, sodium nitrite (E250 in minimum amounts — the norm for smoked meats). If you see soy protein, phosphates, flavorings — the product is of lower quality.
- Fat layer. Balyk should have a thin layer of fat along the edge — this is normal and adds juiciness. Complete absence of fat is a sign of a pressed product.
- Manufacturer. Choose brands with their own meat shop, reputation and transparent composition.

How to store and serve meat delicacies
Storage. In the refrigerator at +2…+6 °C. Boiled-smoked items — 15–30 days in vacuum, 5–7 days after opening. Dry-smoked balyks — up to 60 days in vacuum. Slice immediately before serving: a sliced product loses its aroma faster.
Serving. Keep the meat for 10–15 minutes at room temperature for fuller flavor opening. Classic pairings:
- Balyks and ham — in thin slices on black bread with mustard or horseradish
- Chicken quarter — cold as a snack or warmed with mashed potatoes
- Smoked poultry — in salads (Caesar, Nicoise), in cream soups
- Meat slices — on a board-platter with marinated gherkins, olives, cheese, mustard
