Product Description

Smelt is a small cold-water fish. Finnish smelt is traditionally considered one of the best in flavour: aromatic, tender. The 15+ cm size is optimal for pan-frying in flour.

How to Cook

• Pan-fry in flour to a golden crust — 4–5 min per side
• Bake in the oven on parchment — 15 min at 180 °C
• Grill — 4–5 min per side
• Cook in batter
• Marinate and bake

Storage and Defrosting

Store in the freezer at -18 °C as specified on the packaging. Defrost slowly in the refrigerator over 8–12 hours — this preserves the flavour and structure of the flesh. Do not defrost in the microwave or in warm water. Once defrosted, consume within 24 hours; do not refreeze. The exact shelf life is shown on the packaging.
